Salmon tartare and avocado
Filet of pike perch and Champagne lentils
Stuffed quail with cranberries
Rolled filet mignon with pear
(a new specialty of Épernay — a light rose-colored biscuit made with marc de Champagne)
Pavlova with red fruits
Tsarine’s Rosé cuvée has been classed as one of the eight best rosé champagnes in the world. The wine, based on a perfect balance among Chardonnay (34%), Pinot Meunier (33%), and Pinot Noir (33%), best expresses its qualities when served at between 8 and 10°C.
