This light and savory festive meal is perfect for sharing with friends or family, accompanied by the fine, delicate bubbles of Tsarine’s Cuvée Premium Brut.

Available in 75-cl bottles or 150-cl magnums, Tsarine Cuvée Premium Brut should be enjoyed ideally at between 8°C and 10°C, throughout the meal.
Isabelle explained her choice of food-champagne pairings for Cuvée Premium:
“— As the starter, fresh asparagus are seasoned with a citrus-flavored mousseline sauce, which harmonizes with the grapefruit and clementine notes present in Tsarine Premium’s palate. For the main course, I suggest cod paired with bacon — a “surf and turf” combination that works well with Cuvée Premium. For dessert, a light lemon cake, in harmony with this champagne’s citrus fragrances and flavors.”
Tsarine Premium: balance and elegance
According to Isabelle Tellier, Chef de Cave, who develops all the Tsarine champagnes: “Tsarine Premium is the perfect balance among the three Champagne grape varieties; it’s a harmonious champagne with very fine bubbles. As Chef de Cave, my task is to guarantee that subtle balance.My role is to assert the Tsarine style, which is all about elegance and freshness of flavor.”
Tsarine Cuvée Premium is blended of 34% Chardonnay, 33% Meunier and 33% Pinot Noir grapes.
Tasting notes: The aromas are expressed gradually on notes of hawthorn, then orange.
The flavours of citrus fruit, grapefruit and clementine gently blend with those of white peach to produce a harmonious palate offering a vibrant and silky smooth texture.
Its lightly saline finish brings pleasant lemony notes.
Tsarine Cuvée Premium was awarded two stars by the 2023 Hachette Wine Guide, a reference for wine lovers for over 30 years. Two stars mean a “remarkable” wine.
