Tsarine Premium for a Happy Holiday Menu!

Reims, December 2022

To accompany Tsarine’s emblematic cuvée, Isabelle Tellier, Chef de Cave and gourmet cook, suggests a delicious seafood menu that goes perfectly with the balance and harmony of the champagne and the freshness of its aromas.

Tsarine Cuvée Premium: Isabelle’s holiday menu

Crab-and-avocado salad with orange

Main course

Seafood blanquette and red Camargue rice

Bavarois cake with nougat and apricots

In the 75-cl bottle or the 150-cl magnum, Tsarine Brut Premium should ideally be enjoyed between 8°C and 10°C, throughout the meal.

Isabelle commented on her choices of food-champagne pairings for Cuvée Premium:

“— For the starter, I wanted something light and fresh, and came up with crab set off with a touch of orange. The seafood blanquette can be done with salmon or haddock steaks, scallops, and shrimp with a light béchamel based on fish stock. For dessert, a Bavarois cake with fruit — a light gourmet treat that melts in your mouth.
